This presentation profiles three cha chaan tengs in Sham Shui Po and draws on their owners' and workers' accounts to argue against a further rise in the statutory minimum wage.

…we spoke to three shops on Apliu Street. Shop A said the last increase forced them to cut a dishwasher's hours. Shop B said they simply raised prices and lost no staff. Shop C said the increase was the reason they closed a second branch. Three shops, three very different answers — and that, we think, is the story. Policy at this scale cannot be made from a spreadsheet in Central. It has to listen to Ah Ling, to Uncle Wong, to the neighbourhood. The numbers matter. The neighbourhood matters more.
